New Year New You

It's been a while....it's been a while for a lot of things for me.  One is blogging, and  the other is cooking healthy meals for my family.  It feels like the past year has been a whirl wind and I am just now getting past the storm!  I passed my Certification in Diabetes Education, said goodby to my part-time eduction job of 15 years, trained and now contracting with a Pharmaceutical company, as well as a medical device company!  I also started my own business with Nerium International.  All this has helped me grow and flourish in my career and I have worked my tail off to get here.  2014 brought me many great things and I also sacrificed a lot.

So I am starting fresh this year....looking at life in a new way!  Especially enjoying family meal time (the nights we can) and reaping the rewards of all my hard work from 2014!

My blogs will continue to be around healthy meals or semi-healthy meals and how I am discovering a new me (or the me that needs to be explored) this year!  

Since Christmas break is over....I actually cooked 3 meals!  They may not have been the lowest carb, lowest fat, or healthiest....but my kids were so excited (and hubby)!  You would have thought I took them to Disney World.  We all crave family time, family meals, foods that taste good, and foods that make us feel good. 

I appogize in advance for no food pictures so I will add one at the end to make you laugh! 

 So, I started off with a pasta bake (used whole grain, pasta sauce with little ingredients, and low fat mozzarella cheese).  Tasted great and Hubby got left overs twice for lunch!  

The next night was baked potatoes topped with shredded BBQ chicken.  I just boiled some chicken and added my favorite BBQ sauce to it.  No butter and no sour cream!  The potatoes were smaller and then added a salad to fill our bellies!

3rd night was beef nachos (like I said...not the best option, but really yummy). I did choose a lean grassfed beef, added cumin, chili powder, onion flakes, place the mixture over tortilla chips (I like the Kroger organic ones) topped with tomatoes, advacado, and salsa! 

Not sure what tonight will bring but, I am excited to be back in the kitchen and my blog, though!

As I get back in the swing of life, I will be posting much healthier options and a new veggie idea each week!  Stay Tuned!
